Abstract

Analyses performed for R. gelatinosus biomass produced in our laboratories using fish processing wastewaters showed no pathogenic organisms and high concentrations of oxycarotenoids and proteins. The objective of this research is to use the bacterial biomass in the feeding of broilers and investigate its effects on broilers growth and meat cuts quality, concerning to proximate composition, color, oxycarotenoids and rancidity. Broilers will be raised during 45 days under controlled temperature and lightness, receiving commercial feed according to each period. At termination phase, broilers will be randomly divided to receive different biomass amounts (0, 1.0, 2.0 and 3.0 g/kg) added to the commercial feed, which mean four treatments. Productive parameters will be recorded and, after slaughtering, meat cuts will be analyzed for proximate composition, color and oxycarotenoids contents. The meat cuts will be frozen for different times (0, 15, 30, 45 and 60 days) at -22oC and, after defrosting, the effect of oxycarotenoids on lipid oxidation will be investigated. (AU)
