Abstract

Plant-derived compounds can provide important health benefits, however it is necessary to develop compositions in order to improve its pharmaceutical, dietary and/or cosmetic applications. Syzygium aromaticum (synonym: Eugenia cariophylata) commonly known as Indian clove is an aromatic plant specie of special interest by the pharmaceutical and food industry due to its antioxidant, analgesic and antimicrobial activity. The low solubility, chemical instability and volatility of some of its major bioactive compounds (eugenol, ²-cariophylene among others) justify the selection of this specie as a model to develop this project which aims to investigate different technological routes to obtain solid lipid particles (nano or microstructurated) containing bioactive compounds of Syzygium aromaticum, evaluating the physicochemical properties of the product and the biological activity. The influence of the type of lipid (solid and liquid), the type of the emulsifier and the emulsification process will be evaluated. The emulsions will be characterized by the Zeta potential, drop size, electric conductivity, total polyphenols content, chemical markers concentration and antioxidant activity. The selected compositions will be submitted to drying/solidification process, in order to obtain solid lipid particles. Three processes will be evaluated, spray drying (with drying carriers addition), prilling/spray cooling and lyophilization. The solid particles will be characterized by the chemical composition, antioxidant activity, particle size, encapsulation efficiency, solubility, crystalline state, morphology (scanning electron microscopy, SEM) and thermal properties (DSC). The skin penetration and the physicochemical stability of the product will be evaluated in order to develop practical applications.
