Abstract

According to the Brazilian Health Surveillance Secretariat, salmonellae are the major etiological agent of human outbreaks reported from 2000 to 2011, and chicken meat, eggs and related products are among the top ten foods involved. Regarding the non-typhic Salmonella in humans, Salmonella Heidelberg seems to be able to cause more severe disease than the other serovars. Concerning chickens, the identification of factors that contribute to Salmonella infection aims to reduce carcass contamination and animals morbidity and mortality. The environmental stress (heat, cold, moisture and ammonia) has been suggested as a factor that can induce animal colonization by enteric pathogens, increase horizontal transmission and contributes to carcass contamination during slaughter and meat processing. Stress in birds and other animals involve a cascade of physiological adaptive responses. Under stress the activation of hypothalamic-pituitary-adrenal a (HPA) and the sympathetic nervous system (SNS), which has effects on the immune system. This project proposes, inside the neuroimmunomodulation project developed by the School of Veterinary Medicine, University of São Paulo, to study the interactions of two Salmonella Heidelberg strains (genetically diverse by virulence and clone) in chicks subjected to cold stress, with the purpose of evaluating changes in the immune cells profile, alteration in lymphoid organs, liver, intestinal morphometry and immunohistochemistry and blood parameters related to stress, under the challenge conditions.
