Abstract The presence of some species of the genus Arcobacter in animal's foods may represent a biological hazard to consumers, because under certain circumstances they favor the occurrence of food poisoning. Although the potential of the agent to cause foodborne illness is known, there are few epidemiological studies in Brazil. The aim of this project is to isolate and characterize by genotypic assays some strains of Arcobacter spp isolated from parts of chickens meat marketed in São Paulo. A total of 300 cuts of breast, wing, thigh and drumstick of chicken coming from local markets, butchers and small in São Paulo markets will be assessed. After the step of pre-enrichment, samples are grown in a selective medium, Johnson and Murano. Bacterial species and virulence genes will be identified by molecular techniques (Polymerase chain reaction - PCR). | |
