Abstract

Honey is a matrix whose bioactive properties arouse great scientific interest. There is a consensus that bee species and plant species visited for it can affect these properties. The honey of stingless bees of the Amazon has been little studied, and little is known about its bioactive potential, compared to honey produced by bees of the genus Apis. So, the aim of this study is to evaluate the antioxidant potential of honey produced by bees Melipona seminigra and Melipona interrupta, which are native stingless bee of Amazon. Spectrophotometric methods will be used to determine the total phenolic, total carotenoids and total flavonoids in addition to the antioxidant potential in vitro by the methods of DPPH, FRAP and ORAC.
