Abstract

Peanut (Arachis hypogaea L.) is a highly appreciated legum around the world and it has high economic importance. It is grown in over 100 countries and it is the fourth most produced oilseed in the world. It is one of the most complete foods in a nutritional aspect, and it may be considered a functional food if consumed in appropriate portions not only owing its content of oil, protein and carbohydrate, but also because it has high nutritional value given by the presence of vitamin E, niacin, calcium, phosphorus, magnesium, zinc, iron, riboflavin, thiamine and potassium. It also is a source of phenolic compounds such as stilbenes, flavonoids and phenolic acids, as well as tocopherols, all known to have antioxidant activity. In Brazil, and in order to meet the demand of growers located in the northeastern backlands, most populous semi-arid region of the world, Embrapa established a peanut breeding program, focusing on developing of early cultivars, productive and adapted to drought. Thus, the aim of this study is to identify the full range of polyphenols found in peanuts cultivars tolerant and sensitive to water stress developed by Embrapa, in Brazil, by high resolution mass spectrometry (LC-ESI-LTQ-Orbitrap-MS). In addition, it will be applied to the data matrix a Principal Component Analysis (PCA) and Hierarchical Cluster Analysis (HCA) in order to identify the phenolic compounds correlated with water stress resistance.
