Abstract

In Brazil, lamb farming for the meat has grown steadily over the years, this activity is extremely important, since animals can adapt very well in different edaphoclimatic conditions, and our country, due to the conditions, has a huge chance to reach among the the main sheep-producing countries. Ruminants as a whole are animals that produce significant amounts of greenhouse gases through ruminal fermentation, which can cause severe climatic changes on the planet, so there is great concern about the mitigation of these gases coupled with an increase in production. In addition to environmental factors, the producer looks for some production systems that add value to his product, and the substitution of chemical additives for something more natural is extremely desired. When the inclusion of extract of mate in the diet of cattle, the animals produce meat with a greater softness and a composition that can prevent the development of degenerative diseases, such as colorectal cancer, but will these characteristics also be observed in sheep? Therefore, the present project will verify the efficacy of the yerba mate extract in terms of the modulation of the microbial flora and its consequent production of gases, in addition to conducting tests of meat quality, metabolic profile and oxidative stability. It is expected that the inclusion of yerba mate extract modulates the ruminal fermentation in order to modify the microbial flora thus reducing the production of gases, concomitantly it is expected that the extract generates positive effects on the stability of the meat and helps in the formation of antioxidants endogenous, which will consequently reduce the risks to consumer health.
