Abstract

The objective of this project is the determination of the inorganic composition of cocoa-based food and the establishment of sample preparation methods for in vitro determination of metallic species bioavailability. For the bioavailability study it will be use a method of gastrointestinal digestion in vitro, where digestion will simulate the steps that occur in the mouth, stomach and intestine and, still, a step of dialysis. The quantification of the analytes, total concentration in the food and the bioavailable fraction, will be held using spectrometric methods of analysis, such as Optical Emission with Inductively Coupled Plasma Spectrometry (ICPOES) and Graphite Furnace Atomic Absorption Spectrometry (GFAAS), depending on the content of the analyte to be determined.
