Abstract

Mono (MUFA) and polyunsaturated (PUFA) fatty acids have functional properties, such as anti-inflammatory action, regulation of the immune response, proven effect in the prevention of NCDs, protective effect against viral infections and the development of some types of cancer. There is an important role for PUFAs, such as n-3, in modulating the functions of the immune system, decreasing the severity of inflammatory disorders. The increase in oils rich in PUFAs in the pig diet improves the blood biochemical parameters of the animals. This is due to the fact that these fatty acids have a hypocholesterolemic effect in both humans and pigs. PUFAs increase LDL-cholesterol receptors in cells, increasing secretion of bile acids in bile, that is, increasing the excretion of cholesterol by decreasing its levels in the blood serum. This impact at biochemical level is a consequence of changes at transcriptomic level that still need to be properly investigated. Therefore, it is essential to investigate the changes occurred at transcriptomic level and its relationship with biochemical parameters measured in blood serum for a better understanding of the biological processes involved with metabolic diseases. Thus, the objective of this study is to verify the effect of diets of male pigs immunocastrated in the phases of growth and termination, with different fatty acid profiles, on the biochemical parameters of blood serum and its association with the transcriptomic profile of the liver of these animals.
