Abstract

In the structure of chitosan, two groups have high susceptibility to react by nucleophilic attack: the amino groups and / or acetamide and hydroxyl groups of the ring. The hydroxyl groups can be modified by replacing the hydrogen atoms, but its reactivity is lower than that of the amino group. Other reactions may also be carried out in order to selectively modify the free amino groups, aiming to change the properties of chitosan. Thus, the aims of this project are: I) Synthesis and characterization of polysaccharides containing varying proportions of hydrophilic and hydrophobic groups. II) The second step involves the study of the derivatives focusing their ability to self-associate in aqueous solution as well as their antifungal activity against the gus "Aspergillus flavus". (AU)
