Synergetic Application of Ionic Liquids as New Naturally based Antimicrobial Preservatives and Emulsifiers

Abstract

We present a strategy to obtain highly stable emulsions with improved shelf life using ionic liquid (IL) technology, as exemplified by ILs obtained from fatty acids and choline. ILs presented high emulsifier ability affording emulsions with kinetic stability between 4 and 12 months. ILs also presented antimicrobial effectiveness against fungal and bacterial strains, while acting as emulsifiers at low concentrations. Through this approach, ILs derived from suitable compounds obtained from natural sources may have synergetic application potential as emulsifiers and antimicrobial preservatives, envisioning sustainable emulsion-based products and processes for the agri-food, cosmetic, and pharmaceutical industries.
