Abstract

The aim of this research is to evaluate the chemical composition of strawberries covered with edible films made with pomegranate peel extract (Punica granatum L.), chitosan and gelatin. For this, pomegranate peel extracts will be obtained using environmentally friendly solvents such as natural eutectic solvents (NADES). The extracts obtained will have their phenolic components identified and quantified by liquid chromatography coupled with high-resolution mass spectrometry (nanoLC-LTQ-Orbitrap-MS) and liquid chromatography (HPLC-DAD). After chemical characterization, the extract with the highest phenolic content will be incorporated into the biofilms. The ideal concentration of pomegranate extract, chitosan, and gelatin in the films will be obtained through response surface design (mixture modeling) using as the response the results of the rheological, physicochemical, antimicrobial and morphological tests of the materials. Once the coating material composition is optimized, it will be used to coat strawberries, which will be stored under refrigeration. During the storage strawberries will be evaluated: soluble solids content, pH, color, titratable acidity, mass loss, firmness, cellular respiration rate, anthocyanin content and vitamin C. In addition, the volatile profile of the covered strawberries will be evaluated using solid-phase microextraction (SPME) and gas chromatography coupled to mass spectrometry (CG-MS). Finally, sensory tests will be conducted with consumers to know the sensory acceptance, the purchase intent and preference maps. (AU)
