Abstract
The need for faster analytical methods with high efficiency is what drives the research applied to food science. Metabolomics is an extremely versatile platform that integrates statistical and experimental data of high reliability from analytical results. By allying modern mass spectrometry techniques to this extremely fertile segment, it is possible to carry out improvements and development. Samples of several beef products, follicular fluid, red meat and milk will be directly analyzed, with minimal sample preparation through Mass Spectrometry Imaging (MSI). Within this scope, ion sources such as matrix-assisted laser desorption/ionization (MALDI) and electrospray ionization (ESI) will be widely exploited. Structural elucidation will be supported by fragmentation reactions and analysis by high resolution mass spectrometry with ionization by electrospray (ESI-Orbitrap). The compounds (markers) may be pre-selected (target analysis) or identified post-analysis (metabolic fingerprinting). (AU)
